A great protein packed breakfast. Make these egg bites on Sunday and have them for breakfast throughout the week.

Ingredients

  • 2 heaping tablespoons Tabasco sauce
  • 18-21 Eggs
  • 2 cups Grated cheese (whatever kind you like - gouda, cheddar, Monterey Jack, munster, etc
  • 1 cup Cottage cheese
  • 1 package Bacon

Instructions

    Cook the bacon. Let it cool. Chop it up into small pieces to be sprinkled on top of each egg bite.

    Add to a blender - 18-21 eggs, cottage cheese, grated cheese, Tabasco sauce. Blend well.

    Pour the mixture into a greased silicone muffin pan. Top with chopped bacon.

    Cook for 30 minutes at 300 degrees. *You'll need to cook the egg bites in 2-3 batches.
